it tasted better than it looks!


Recipe from my sister:

Penne Verde (pesto)

Ingredients: 1kilo penne pasta, 1/4c butter, 3/4c heavy cream, 1 bunch basil, 1/4c pine nuts, extra virgin olive oil, 1 clove garlic, one lemon, parmesan cheese

To make: toast the pine nuts in a non-stick frying pan (be careful not to burn them!). add nuts directly into food processor along with basil (leave only no stems), a couple table spoons of oilve oil and garlic. combine until mixture is smooth,thick paste. now
start water boiling for you pasta (be sure to salt the water). in a saute pan, melt the butter and then add the cream. whisk pesto mixture into the cream, and add the zest of one lemon. season to taste with salt and pepper and maintain on low heat until pasta is done. finally, combine well drained pasta with pesto sauce. garnish with a slice of lemon and parmesan cheese.

NOTES: this is the true recipe. i typically make the same amount of sauce as above but with half the amount of pasta. i also add slices of chicken breast when i have it.
